1/2 cup pepitas, toasted
1 cup cilantro leaves and stems, lightly packed
1/3 cup freshly grated Parmesan
2 garlic cloves, peeled
2 Tbsp fresh lemon juice
2/3 cup olive oil
sea salt
16 oz frozen ravioli
1/2 cup black olives

Directions:
Directions:
Bring a large pot of water to a boil. Make pesto n meantime: Combine most of pepitas, cilantro, Parmesan,garlic, lemon juice, and splash of olive oil and blend til smooth. Continue blending and gradually add in remaining oil til pesto is smooth and vibrant green. When water boils, salt generously and add ravioli til they float. Drain and toss with spoonful of pesto. Soak a bit, then add more pesto and olives. Top with remaining pepitas.
