1/2 cup butter, softened
1 cup flour
1Tbs sugar
3 eggs, separated
1 cup sugar
2 Tbsp all-purpose flour
1/4 tsp salt
1/2 cup half-and-half
2 1/2 cups cut-up rhubarb
1/3 cup sugar
1tsp vanilla

Directions:

Heat oven to 350º. Mix margarine, 1 cup flour and 1 Tbsp. sugar. Press into ungreased baking pan, 9 x 9 x 2 inches. Bake 10 minutes. Mix egg yolks, 1 cup sugar, 2 Tbsp. flour, the salt and half-and-half; stir in rhubarb. Pour over baked layer. Bake 45 minutes.

Beat egg whites until foamy. Beat in 1/3 cup sugar, 1 Tbsp at a time; continue beating until stiff and glossy. Do not under beat. Beat in vanilla. Spread over rhubarb mixture. Bake until light brown, about 10 minutes.

I usually double this and place in 9 x 13 pan. This is so good and refreshing, especially made with Mom and Dads fresh rhubarb!!
