Marinade
1/2 cup white vinegar
1/2 cup orange juice
3 tablespoons minced garlic
2 tablespoons achiote molido or achiote paste
1-2 habenero peppers
1 teaspoon cumin
1/2 teaspoon black pepper
1/4 cup best tequila

5 pounds of pork shoulder or butt cut into
1-2 inch squares

1 bunch of cilantro and served over white rice

marinade consists of 1/2 cup distilled white vinegar
1/2 cup of orange juice( fresh is better)
Juice of 5 fresh lemons
1/4 cup of the best tequila you can find
3 tablespoons of minced garlic
2 tablespoons of achiote molido ground or achiote paste (ground is more authentic)
1 teaspoon of cumin
1/2 teaspoon of black pepper
1-2 habenero peppers seeded and chopped
Put all this in a blender and liquify it.

Pour marinade over 5 pounds of pork shoulder or butt that has been cut into 1-3 inch squares
And place in ziplock bag for at 3-4 hours or longer for stronger flavor
After marinating set oven to 350
Take a foil pan place meat and marinade in pan covering the meat
Cover with foil two times to ensure that no moisture will escape.
Cook at 350 for 3-4 hours in oven in a baking pan. Serve over white rice
And add cilantro

It's an authentic Mexican earthy flavor that is spicy
If done right it will be tender
