3 med. Sweet potatoes (about 2-1/2 lb.), sliced into 1/8 inch slices (peeled or unpeeled)
2 T Butter
1 small onion, thinly sliced
2 garlic cloves, minced
2 tsp fresh thyme leaves, divided
1 c shredded Gruyere cheese
1/2 c heavy cream
1/2 c milk
Salt & pepper

Preheat oven to 400º.
1. Melt butter in large saute pan over medium-high heat. Add onion, and saute for about two minutes until soft and translucent. Add garlic and saute for another minute until fragrant.
2. Add in cream, milk, salt, pepper and 1 tsp of thyme, and whisk until combined. Continue cooking for an additional 2 minutes until sauce comes to a simmer (not a boil) and starts to thicken. Remove from heat.
3. In the meantime, lightly grease baking pan (9x9). Spread half of potatoes in an even layer on bottom. Top with half of the milk mixture and then half of the cheese.
4. Top with the remaining potatoes, milk mixture and cheese. Sprinkle with remaining thyme. Cover with foil and bake for 30 minutes. Remove foil and cook for another 25-30 minutes until sweet potatoes are cooked through.
