1 large can crushed pineapple - or about a cup of pineapple juice (or, orange juice, for orange sauce)
1/2 cup sugar
1/3 cup organic ketchup
1/2 - 1 Tbl soy sauce
1 tsp minced garlic
Pinch of grated fresh ginger root
1/4 cup white vinegar

Optional: 1/4 cup orange juice

Cornstarch mixed with water for thickening.

Directions:

Combine all ingredients in saucepan, except cornstarch. Bring to a boil.

Add cornstarch water and thicken to desired consistency.

( 1 tbl of cornstarch to 1/4 cup water . . . . . more or less, to desired thickness)

This is a basic sweet and sour sauce we use to top Chinese fried rice, or to create sweet and sour Vegis, tofu etc.

This recipe originated with Nana. She took Chinese cooking classes from Kwan during the 60's, also where she learned to make her shoyu chicken recipe. Kwan went on to establish a successful Chinese restaurant called Kwan's, in Salem, Or, which is still here today.
