2 T. olive oil
1 pound andouille sausage diced
3 skinless boneless chicken breasts or thighs (Can also use meat from a rotisserie chicken)
Salt & Pepper to taste
1 large onion, diced
1 bell pepper, diced
3 stalks celery, diced
1/2 t. Tony's
1/4 t. cayenne (or to taste)
3 cloves garlic, finely chopped
1/2 pound okra, sliced into 1/4 inch slices
1 (28oz) can diced tomatoes with juice
2 cups hot chicken stock
1/2 pound peeled and cleaned medium size shrimp
1 T. chopped parsley
2 bay leaves
1 T. chopped cilantro
1 heaping T. of tomato paste

Directions:
Directions:
Place a large pot, or dutch oven, add the olive oil. Once the pot is hot, add the diced sausage
and allow it to brown for a few minutes. Remove the sausage and set aside. Next add the chicken pieces and sprinkle with salt and pepper. Cook for 2 to 3 minutes and remove from the pot. Saute the celery, onions, bell pepper. Next add the bay leaves, Tony's, salt and pepper. Add in the garlic and saute for 2 minutes and then add in the tomato paste. Finally add in the okra, diced tomatoes and the chicken stock, along with the chicken pieces and sausage. Simmer mixture for 20 minutes. Add in the shrimp and simmer for only two minutes. Finish by adding in the parsley, cilantro and red pepper flakes or cayenne if desired.
Serve over cooked rice

If you use the meat from a rotisserie chicken you will cut down the time needed to cook this dish. You can also use a can of okra with tomatoes in place of the fresh okra. This was a hit with Stan and Megg.
