1 boneless, skinless chicken breast
1 lb kielbasa, cut in chunks
1 large onion, chopped
2-3 garlic cloves, minced
3 ribs celery, chopped
1/2 c chopped green onions
8 oz mushrooms, sliced
1 bunch parsley, stemmed and minced
4 T tomato paste
2 T flour
1 c white wine
cayenne pepper or Cajun seasoning
salt, pepper
olive oil
cooked rice, for serving

Directions:
Directions:
Season the chicken well with cayenne pepper/Cajun seasoning, salt, and pepper. Heat a drizzle of olive oil in a large sauce pot and sear chicken on all sides. Move to one side and add onions and garlic, saute until translucent and move to the side. Add a bit more oil and saute the flour for a moment. Stir in the tomato poaste and cook for a few moments. Stir the flour/tomato mixture into the onions.

Add the kielbasa, celery, mushrooms and white wine, then add water to cover. Stir well and simmer over medium low heat, covered, stirring occassionally, about 45 minutes or until chicken is very tender. Remove chicken: cube or shred and return to the pot. Add the green pepper, green onions and parsly. Simmer until tender. Adjust seasonings as needed.

Serve over rice, with a crusty rustic bread and white wine. Leftovers freeze well.
