Ingredients: 1 c sugar 1 c milk 1/2 c butter, melted 1 egg, slightly beaten 1 t baking powder 1 to 1-1/2 c flour 1/2 t salt 1 t vanilla
Equipment: Krumkake iron (cast metal stove-top, or electric) Wooden or metal cone for rolling Thin spatula

Directions:Beat ingredients together. The batter should be slightly thinner than waffle batter. Heat the krumkake iron until a drop of water sizzles on the plate. Drop a heaping tablespoon of batter on the iron and close with light pressure. If using a manual iron, turn once to ensure even browing. Watch closely, as they cook quickly! Carefully open the iron and remove with a spatula to a tray. Roll immediately into a cone shape, then remove roller and place on a rack to cool. This works well with an assistance, especially if using an electric iron which makes two at a time. Store in an airtight container. |

Notes: Translating roughly to "crumb cake" or cookie, these are a fixture at Christmastime. Similar to the anise-flavored Italian Pizzele, they can be filled with whipped cream for serving but are lovely on their own.
