Ingredients: 2 qt. applesauce w/2 tsp. soda added- set aside 2 c. sugar 1 c. shortening 4 c. flour . 1 tsp. cinnamon 1 tsp.cloves 1 tsp.nutmeg ½ tsp. salt ½ lb. raisins (2 - 2½ c.) (less for fruit cake, about 1½ c.) 2 tsp.t. soda 1 12 oz. package of chocolate chips ½ - 1 c. nuts as desired
For fruit cake I add 1 2lb. candied citron (fruitcake mix), or 1 lb. candied cherries and 1 lb. fruitcake mix. If I can find NON spice gumdrops, I might add some of them too!

Directions:Combine sugar and shortening. Sift together dry ingredients. Add to sugar mixture. Stir in applesauce with soda mixed in. Add nuts, mixed candied fruits, chocolate chips, nuts, and raisins. (I use 1 -2 lbs Mixed candied fruit per batch.) Spoon into greased pans. Bake- use toothpick test for doneness. Bake at 375º F for 1- 1½ hours. Less time is needed when filled with all that fruit. Cool and freeze. BEST after it has aged for a month or two. I have even had it in freezer for over a year and the flavor has seemed unaffected except to intensify and be better! |
