1 1/2 lbs. fresh green beans, trimmed and cut in half
1/2 lb. white button mushrooms, sliced
2 shallots, sliced
1 clove garlic, minced
1 cup chicken broth
1/2 cup sour cream
1 can cream of mushroom soup
1/2 cup half and half
2 tbsp. butter
1 tbsp. flour
salt and pepper to taste

1. Preheat oven to 350ºF.

2. Blanche green beans in salted water until fork tender - drain and shock into iced water to stop them from cooking further. This also helps them stay bright green.

3. Sauté shallot, mushrooms in 2 tbsp. butter until mushrooms are cooked through. Add garlic at the end of this cooking process so that garlic doesn't burn. Add salt and pepper to taste. Add 2 tbsp. flour and cook for another minute.

4. In same pan, add soup, broth, sour cream and half and half. Mix well and heat until bubbly, stirring constantly.

5. Add green beans back to pan and stir into the mixture to cover them completely in the sauce.

6. Transfer mixture into a shallow casserole dish. Cover with foil and bake for 30 minutes.

7. Uncover and sprinkle with fried onions - bake for an additional 10 minutes.
