2lbs. cod, cut into pieces
1 stalk celery
2 slices of onion
1 bay leaf
1 tsp. salt
1 tsp. black peppercorns
3 qts. water
butter melted
lemon juice

Directions:
Directions:
1. Add celery, onion, bay leaf, salt and peppercorns to water in a large pot. Bring to a boil.

2. Add fish - bring to a slow boil, simmer about 5 minutes or until fish is tender.

**Do not overcook or fish becomes tough**

3. Drain. Combine melted butter and lemon juice, spoon over fish and serve.

My mom used to make this recipe and I thought it was the best. It's really light, but very flavorful. Enjoy.
