3/4 c butter, softened
1/3 c powdered sugar
1 t lemon juice
1 1/4 c all purpose flour
1/2 c cornstarch
Frosting:
1/4 c butter , softened
3/4 c powdered sugar
1 t lemon juice
1 t grated lemon peel
1 to 3 drops yellow food coloring (optional)

Directions:
Directions:
In a large bowl, cream butter and powdered sugar; beat in lemon juice. In a small bowl, combine flour and cornstarch; gradually add to the creamed mixture and mix well. Shape into two 8 inch rolls: wrap each roll in plastic wrap. Refrigerate for 2 hours or until firm. (You can freeze them for later use too.)

Unwrap and cut into 1/4" slices. Place 2" apart on ungreased baking sheets. Bake at 350º for 8-12 minutes or until the cookies are firm to touch. They are better crispy than soft.

Frosting: In a small bowl, beat the butter and powdered sugar until smooth. Stir in lemon juice, lemon peel, and food coloring. Frost cooled cookies.
