2 lb leeks
salt and Pepper
2 carrots
1 onion
6 Tbsp butter
1/2 cup broth
2 Tbsp flour
1/2 lemon

Directions:
Directions:
Preheat oven to 350 F.
Trim leeks and blanch in boiling salted water for 5 minutes. Drain.
Peel and slice carrots. Peel and slice onion.
Melt 2 Tbsp of the butter in a flameproof casserole and fry the carrots and onion till golden.
Arrange leeks on top and add broth and seasoning.
Cream remaining butter with the flour to make a paste. Squeeze juice from lemon and work into the mixture with a fork.
Spread over the leeks.
Cover and cook for 30-35 minutes.
Serve with side dish of grated cheese and chunks of brown bread.
