1 1/2 lbs. ground beef
1 cup chopped onion
1 clove garlic, minced
1 (14 oz.) jar spaghetti sauce
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
3/4 cup water
1 t. Italian seasoning
1/2 t. salt
Black pepper to taste
1 (7 oz.) package small shell pasta, cooked and drained1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
2 eggs, beaten
1 cup shredded cheddar (I like sharp)
1/2 cup soft breadcrumbs (Can also use Panko)
1/4 cup grated Parmesan cheese

Preheat oven to 350º
In a medium saucepan, cook ground beef, onion and garlic until meat is cooked and veggies are tender.
Stir in macaroni, spinach, eggs, and cheese.
Pour into a greased 13x9 inch baking dish. Sprinkle with Parmesan cheese and top with breadcrumbs.
Cover and bake for 30-35 minutes or until bubbly.

Stan would request this dish almost every week. I hesitated to include this in the cookbook because now they will know that I was sneaking in spinach!
