6 Chicken things (washed and dab dried with paper towel)
1 1/2 cups rice
1/2 stick of butter
1 - Cup of White wine
2 - 14oz can chicken broth
1 small package mushrooms washed and sliced (can use the ones that are already sliced or a small can drain)
1 - 14oz can artichokes drain and chopped
1 - 14oz can diced tomatoes
1 - Small can sliced black olives - drain
1 - Small jar pimento olives drain and sliced
Garlic powder
Italian seasonings
Salt & pepper
Roasted Chicken seasoning (if you have it)


Directions:
Directions:
Place the rice in the bottom of a casserole dish. Pour the white wine and chicken broth over the rice. Add the mushrooms, artichokes, diced tomatoes, black and green olives to the rice. Sprinkle with garlic powder, Italian seasonings and salt and pepper. Mix it all together.

Place the washed chicken thighs on top of the rice mixture. Cut and place the butter on the thighs, sprinkle with garlic powder, salt, pepper and roasted chicken seasoning.

Cover with foil, bake at 350° until chicken & rice are fully cooked about 1 to 1½ hours. Check after 30 minutes and add water as needed so the rice does not get dried out.
