2 pie crusts (Pillsbury or Trader Joes ready in a box), room temp for 10 minutes
2 cans of chili (Stagg country style with beans or 1 classic or steak and one country style)
1 cup cheddar cheese or 4 Blend Mexican cheese

Garnish: sour cream and tortilla chips

Preheat oven to 375 degrees. In a 9-10 inch pie plate, roll out one of the pie crusts in the plate letting edges hang over top. Poke a few holes with a fork around sides and bottom. Pour both chili cans over pie crust and 3/4 cup of cheese over chili. Place second pie crust over and secure top crust under edges of bottom crust then seal edges with a fork. Return to oven approximately 35-40 minutes until golden brown. Remove and top with remaining 1/4 cup cheese on top and place in oven for 5 additional minutes until melted.
Serve with side salad and chips.

If you don't seal the edges well, chili can spill out during cooking. Place a cookie sheet with foil on the next shelf down to catch any possible drippings.
