1 egg white, beaten
2/3 cup brown sugar, packed
1 tsp vanilla
2 cups whole pecan halves

Directions:

Preheat oven to 250º. Line a large baking pan or cookie sheet with parchment paper. In small bowl, beat egg white with mixer until it forms stiff peaks. Add brown sugar and vanilla. Mix thoroughly. Using a fork, dip each pecan half into the mixture to form a thick coating. Place each pecan onto the baking sheet approximately 1" apart. Continue until all pecans are used. Bake for 30 minutes. Turn off oven and let cool in oven for 30 minutes. Remove from oven and cool completely. Can be stored in refrigerator for 2-3 weeks. Makes about 40-50 pecans.
