1/4 cup all-purpose flour

Directions:
Directions:
Trim fat from roast; salt and pepper roast. Brown roast in a small amount of oil in frying pan or heavy pot. When roast is brown, add enough water to pot to cover roast. Cook on low heat for about 2 hours or until tender. Roast may be cooked in crockpot on medium heat for 2 to 3 hours. Reserve broth for gravy.

For gravy, dissolve flour in a small amount of cold water; add gradually to hot broth stirring constantly until thick.
