6 - 7 tart apples ( of course we prefer hand picked mackintosh
3/4 - 1 c sugar, 2 T flour
1/2 - 1 teas cinnamon, dash nutmeg, dash salt
Sprinkling of Brown Sugar (Nana's addition)
2 T butter (Nana's addition for a more caramel like mixture)
Double Pastry

Slice apples. Combine sugar, flour, spices & salt. Mix well with apples. Line 9" pie plate with pastry, fill with apples. Dot with butter, sprinkle with brown sugar. Add top crust. My Aunt Lily taught me to brush top crust with whipped egg white & sprinkle with a little white sugar. Great presentation and a browned crust. Bake at 400º for 50 minutes. Serve warm with Vermont Cabot Cheddar Cheese, or ice cream

This is our favorite apple pie. I made my first one in 1969 the night before Carrie was born - November 18, 1969. I did get to have a piece when I returned home from the hospital 3 days later.
