1 lb. mild pork sausage
4 tbsp. butter
3 cups diced onion
2 tart green apples (I like Granny Smith), cored and chopped
1 cup chopped celery
1 cup dried cranberries
1 tbsp. chopped fresh sage leaves
2 tsp. chopped fresh rosemary
6 cups boxed seasoned bread cubes (croutons)
2 to 3 cups chicken stock
1 tbsp. salt
2 tsp. black pepper

1. Preheat oven to 375 degrees F.
2. Saute and crumble the sausage in a large skillet over medium-high heat until cooked through, about 10 minutes.
3. Transfer the sausage and drippings to a large bowl.
4. Melt the butter in the same skillet over medium-high heat. Add the onions, apples, and celery and saute until the onions are soft, about 8-10 minutes.
5. Stir in the cranberries, sage and rosemary.
6. Add the mixture to the sausage, then mix in the croutons.
7. Add the chicken stock a little at a time until the stuffing is very moist, but not mushy. Season with salt and pepper.
8. Transfer the mixture into a 14 inch oval or 9 by 13 inch rectangular casserole dish and bake uncovered for 20 to 30 minutes, until the top is crispy.
9. Serve immediately.
