CAKE:
1 1/2 c. vegetable oil
1 1/2 c. sugar
3 c. flour
2 tsp. soda
3 eggs
2 c. grated carrots
1/2 c. nuts, chopped
1/2 c. coconut
3 tsp. vanilla
1 small can crushed pineapple
ICING:
1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 tsp. vanilla
1 tsp. lemon
1 box confectioner sugar
1/2 c. coconut
1/2 c. black walnuts or pecans, chopped

CAKE:
Mix sugar and oil. Add of dry ingredients, then add carrots, coconut and nuts. Add eggs, one at a time. Bake in three 8-inch pans at 300º until wooden tooth pick inserted in center of cake comes out clean (25-30 minutes).
ICING:
Mix all ingredients and add a small amount of milk, if needed to make right consistency. Frost cake.
