1 Large onion, chopped
1 T Canola oil
4 Garlic cloves, minced
4 c. Reduced-sodium chicken broth
1 cans (15 oz.) Fire-roasted diced tomatoes, undrained
3 c Frozen corn
1 (7 oz.) can Chipotle Salsa (San Marcos brand)
1 t ground Cumin
¼ t Pepper
2 c Cubed cooked chicken breast
½ c Fat-free sour cream
¼ c Minced cilantro

Directions:
Directions:
In a Dutch oven, sauté onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, corn, chipotle sauce, cumin and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Stir in chicken; heat through. Garnish with sour cream and cilantro.

We enjoy this soup in the winter. It has the sweet flavor of corn mixed with the hot flavor of chipotle pepper!
