1 box Manicotti Pasta Shells
16 oz. pkg. Italian sausage (pork or turkey)
32 oz. container Ricotta Cheese
16 oz. bag shredded Mozzarella Cheese
1/2 tsp.- 1 tsp. Italian seasoning (depending on how much flavor you want)
24 oz. jar of your favorite Pasta/ Spaghetti Sauce
Optional: 10 oz. frozen Spinach (thawed)

Directions:
In a large cooking pot, heat Manicotti shells to a boil. Cook for about 10-15 min. or until done. Drain water and set shells aside to cool on wax paper or aluminum foil.
Using a cooking pan, cook/brown Italian sausage until thoroughly done. Drain and set aside.
Using a large mixing bowl, combine Ricotta cheese, 1/2 the bag (usually 2-3 handfuls) of Mozzarella cheese and Italian seasoning. Mix by hand until blended together. If you choose to add Spinach, add as much as you desire to this and mix together by hand.
** Preheat Oven to 350º **
Once the shells are cool, stuff them with the cheese mixture and place in an ungreased cake pan. (there may be some mixture remaining. I have found that I'd rather have too much than not enough for all of the Manicotti shells.)
Cover arraigned Manicotti shells evenly with Italian sausage. Then, layer evenly with Pasta sauce. Finally, evenly sprinkle Mozzarella cheese over,as much as you desire.
Place in the oven and bake for abut 30-35 min and Enjoy!
