1 large codfish OR THICK PIECES OF COD
1 onion, chopped
5 mL poulty seasoning
500 mL bread crumbs
45 mL butter
5 mL salt

Directions:
Directions:
Wash codfish and remove fins, or wash pieces of cod fish. Sprinkle cavity of fish with salt. Prepare stuffing by melting butter, add onions, and cook for 10 min. Mix with bread crumbs and seasonings. Add a little water to moisten dressing. Stuff and skewer fish. Place in a large pan and cover fish with strips of salt pork or bacon. Bake at 200o C for 1 hour. Baste occasionally while cooking.
