1 1/2 cups cake flour
1 1/4 tsps baking powder
1/4 tsps baking soda
1/2 cup unsalted butter, room temp
3/4 cup brown sugar
1/4 cup sugar
2 eggs
1/2 cup sour cream
1 tsp vanilla
1/8 tsp salt
1/8 tsp cinnamon
1 1/4 cups peaches, roughly chopped (about 2 med-sized peaches)

Heat oven to 350º F
With a fork, whisk flour, baking powder, soda, salt and cinnamon in a bowl. Beat butter and sugars in a large bowl for 1 min until light and fluffy. Beat in eggs, sour cream, and vanilla until blended. Slowly mix in flour mixture. Fold in peaches. Fill cupcake liners 1/2 full.
Bake for about 20-25 mins or until a toothpick comes out of the cupcake clean.

You take a peach cobbler and turn it into a cupcake? Oh yeah! So moist and delicious and rustic because no two cupcakes are identical because of the peach chunks poking out of tops. I like to swirl in some of my homemade peach preserves too to make it extra peachy. Garnish with coarse sugar while the cupcakes are still warm for that 'lil extra crunch or make a delicious cinnamon buttercream frosting to go on top.
