1 refrigerated pie crust
1/4 cup white sugar
1/4 cup brown sugar
4 tsps cornstarch
1 tsp cinnamon
1 tsp vanilla
1/4 tsp salt
1 Tbsp fresh lemon juice
4 cups sliced, peeled apples (4 medium)
1 tsp coarse sugar
2 Tbsps finely chopped pecans (optional)

Heat oven to 450° F
Remove pie crust from pouch; place flat on ungreased cookie sheet.
In medium bowl, mix 1/2 cup sugard, the cornstarch, cinnamon and salt. Gently stir in apples, lemon juice and vanilla. Spoon apple mixture onto center of crust, spreading to within 2" of edge. Fold crust edge over filling to form a 2" border, pleating crust as necessary. Brush crust edge with water; sprinkle with 1 tsp coarse sugar. Bake 15 mins or until crust is golden brown. Sprinkle pecans over apple mixture. Bake 5-15 mins longer or until apples are tender. Serve with homemade whipped cream or vanilla ice cream.

I love the look of this rustic crostata. I've often "re-created" this recipe (as you can see in the picture) and add a handful of fresh blueberries to the apples and my mother's apple crisp topping.
