One pound gnocchi
4 Tbsp. butter
1 onion, finely chopped
1 red bell pepper, chopped
12 oz. skinless, boneless chicken breast, cut into strips
2 Tbsp. flour
1 cup half and half
1 cup chicken broth
2 scallions, chopped

Directions:
Directions:
1. Cook gnocchi according to directions & drain.
2. In large skillet, heat 2 Tbsp. butter over medium-high heat. Add onion, bell pepper and cook, stirring often, until softened, about 5 minutes. Add the chicken and cook, stirring occasionally, until just cooked through, about 5 minutes; season with salt & pepper.
3. In small saucepan, melt the remaining 2 Tbsp. butter over medium heat.
4. Whisk in the flour and cook until toasted, about 3 minutes. Whisk in the half-and-half and chicken broth; bring to a boil.
5. Lower the heat and simmer until thickened.
6. Whisk into the chicken mixture, then stir in the gnocchi. Bring to a simmer, then season with salt and pepper.
7. Top with scallions.
