2-3 large apples any variety (Gala, Pink Lady, Braeburn, Granny Smith, etc.)
1/4 cup sugar
2 tsps apple pie spice or 1 tsp cinnamon
1/8 tsp salt

Directions:
Preheat oven to 200º F
Line 2 baking sheets with parchment paper and set aside.
Core apples. Using a mandoline or serrated knife, cut apples crosswise into 1/8" slices.
Arrange slices in a single layer on baking sheets.
In a small bowl, combine sugar & spices. Sprinkle sliced apples with half of the sugar mixture. Turn apple slices and repeat with remaining sugar mixture.
Bake for 2 to 2 1/2 hrs or until crisp, turning apple slices and rotating pans every 30 mins. Cool completely on wire racks.
Store apple slices in an airtight container for up to 1 week.

Every fall we always go to Ellijay, GA apples. This time of year, apples come in all shapes, sizes and varieties. This is a fun and healthy recipe to turn an ordinary apple into a crunchy snack. And the entire house smells of baked apples - no candles needed!
