1 c. mini marshmallows
2 c. frozen sliced strawberries in syrup, thawed
2 1/4 c. all purpose flour
1 1/2 c. sugar
1 package strawberry Jello (3 oz.)
1/2 c. solid shortening (Crisco is preferred)
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 tsp. vanilla
3 eggs

Preheat oven to 350 degrees. Grease bottom only of a 9x13" pan. Sprinkle marshmallows evenly over bottom of pan. Combine strawberries and Jello and set aside. In large bowl, combine remaining ingredients. Blend at low speed until moistened and beat 3 minutes at medium speed. Pour batter evenly over marshmallows. Spoon strawberry mixture over batter. Bake for 45-50 minutes, until golden brown. Serve warm with ice cream or whipped cream.

This cake is magical, with the strawberries sinking to the bottom and the marshmallows making a sweet topping. Mamaw Mary knows her stuff!
