3 c. all purpose flour
2 c. sugar
2 tsp. vanilla
2 tsp. soda
1 1/2 c. vegetable oil
3 c. grated green tomatoes
3 eggs
2 tsp. cinnamon
1 tsp. cloves
1/2 tsp. salt

Frosting:
1/2 stick butter
1-8oz. cream cheese, softened
1 tsp. vanilla
1 1/2 c. (about) powdered sugar
Directions:
Directions:
Combine oil, sugar and eggs. Sift all dry ingredients together. Add to egg mixture. Stir in grated tomatoes and vanilla. Bake in a well-greased 9x13" pan, or a Bundt pan, at 350 degrees for 1 hour.
For the frosting, cream the butter and cream cheese together. Add vanilla, then beat in powdered sugar, adding enough so that frosting is a nice spreading consistency.

I was as happy as a puppy with two peters when I found this long lost recipe! It's moist, flavorful and a great way to use those green tomatoes left on the vine before the first frost hits. I grate the tomatoes, squeeze out the excess liquid and freeze them in 3 c. packages just so I can make this cake anytime I want.
