Large Bunch of Collard & Mustard Greens (I mix half and half)
1 ham hock
Chop up any ham you have on hand up to half pound (or you can buy cut up ham pieces)
1 tbls salt
heaping 1/4 tsp garlic powder
heaping 1/4 tsp black pepper
1 Tbsp Tabasco sauce
1 Tbsp Season Salt
1 Tbsp butter

Clean and rinse collards & Mustard Greens thoroughly, remove all stems and cut up into 3 inch pieces. I use a six quart stock pot and pour in 3 quarts of water. Add all the ingredients except for the greens and bring to boil 30 minutes before adding collards.

Add Collards a little at a time to boiling water. Summer for one and a half hours, its hard to overcook. Add the Mustard Greens and cook for another 30-45 minutes. Serve with Hot Pepper sauce and Enjoy!
