1.5 - 2lbs cooked ham (bone in or out)
1 large white onion chopped finely
3 celery stalks chopped finely
2 medium carrots grated
2 cups yellow split peas (WASH well in cold water)
14-16 cups water

Spices:

White pepper to taste
Salt, as needed
2 bay leaves
1-1.5 tbsp. liquid honey

Heavy soup pot (ie) cast iron

Directions:
Directions:
Wash ham and place in water in pot
Bring to boil
Add chopped onion, celery and carrots
Add bay leaves and white pepper
Add salt, if needed
While stirring, add yellow split peas to boil stage again

Reduce heat to low simmer, stirring soup every 15 minutes to prevent burning
(Cooking time: 2.5 -3.0 hours) and add more water while cooking, if desired, to loosen consistency;

At 1 hour interval, taste for salt, and add if needed;

At 1.5 hour interval, remove 2 bay leaves;

In the last 1/2 hour of cooking, add liquid honey, stirring well;

At end of cooking time:

You can either purée soup or leave as is (thicker consistency)

Remove ham and chop into cube size and add to soup mixture

Best served hot with egg salad sandwiches

My childhood years were spent in Montreal, Quebec, Canada. My mother collected many recipes from French Canadian women and this was our favourite, especially on a cold, wintery night....the soup and sandwich combo was a tradition in the Russell household.
