3-1/2 ounces bitter sweet chocolate
2 ounces milk chocolate
3 egg whites
heavy cream

Directions:

1. Break or chop your chocolate into small pieces. Place water in lower pan of double boiler. Allow water to simmer on low heat, be sure water never comes to a boil. Add both chocolates to the upper pan of the double boiler and continue to stir to a smooth mixture. Allow chocolate to cool slightly before adding egg whites.

2. While the chocolate is cooling, using a wire whisk, whip the egg whites until stiff, in a bowl large enough to accommodate all ingredients. Also, using a wire whisk and a separate small mixing bowl, whip the cream until it stiffens.

3. Next using a rubber spatula, stir the warm chocolate into the bowl containing the egg whites. Last fold the whipped cream into the chocolate mixture.

4. Pour your chocolate mousse into decorative glasses and chill for several hours before serving. Chill for at least two hours minimum. Remember this dessert can be prepared a day in advance and still taste extremely fresh.

Depending on your particular taste you can garnish your chocolate mousse in a variety of ways including with: fresh berries, fruit sauces, mints, whipped cream, etc. Because of its rich and creamy texture, chocolate mousse is a universally delicious dessert. that's loved by all.
