1 cup sugar
1 cup powdered sugar
1 cup butter
1 cup vegetable oil
2 eggs
1 tsp vanilla
4 1/2 cups flour
1 tsp baking soda
1 tsp cream of tartar
1 cup chopped hickory nuts (optional) Hickory nuts are difficult to find so I sub walnuts or pecans)

Directions:

Combine sugars, butter, and oil - beat well. Add eggs and vanilla and beat well again. Sift together flour, soda, cream of tartar and add to other ingredients. Mix well. Fold in nuts (optional)

Drop small balls of dough on a cookie sheet. Flatten with bottom of a glass dipped in sugar(may need to moisten bottom of glass for first dipping) .

Bake 350 degrees - 10-12 minutes. Avoid browning the cookies.
Let cool on cookie sheet for a minute or two and then put on rack to cool completely.

These cookies are very very delicate. I have best success if I don't make them very big.

My sister makes these with Hickory Nuts. I haven't been able to find hickory nuts locally, but recently made them with Pecans. This cookie is very delicate and remind me of shortbread in texture. They are yummy, but too delicate for roll outs.
