1 stick butter or margarine at room temperature
2 cups brown sugar divided
1 egg
1 tsp vanilla
1 cup milk
2 cups flour
1 tsp baking soda
Pinch of salt
2 cups chopped rhubarb
1 tsp cinnamon

Directions:
Directions:
With electric mixer, cream together butter, 1 1/2 cups brown sugar and add egg and vanilla. Mix thoroughly. In a separate bowl, stir together flour, baking soda and salt. Add dry ingredients to creamed ingredients, alternating with milk. When blended, mix in rhubarb by hand. Pour batter into greased 9 x 13 glass pan. Sprinkle 1/2 cup brown sugar and cinnamon. Bake at 350 °F for 40 minutes.
