2 eggs
2 cups sugar
2 tsp. Vanilla
1 cup oil
2 cups grated zucchini
½ cup chopped pecans or walnuts - optional
3 cups flour
¼ tsp baking powder
1 tsp baking soda
1 tsp salt
1 small box vanilla instant pudding
1 - 10 oz. jar maraschino cherries, drained, rinsed, and cut into pieces

Directions:
Directions:
Mix eggs, oil, sugar, zucchini, vanilla, and cherries, then mix dry ingredients. Mix well together, pour into two greased & floured loaf pans. Bake for 1 hour and 15 minutes. Makes 2 loaves.
