1/3C Acid Juice (lemon, lime, orange,etc)
1C Olive Oil (or blended Olive Oil)

Take one dish towel and run under cold water, ring out. Make circle withe towel on a counter top. Place medium size mixing bowl on top and tighten the towel to securely hold the bowl in place. Add yolks, acid, and garlic. Using a whisk mix mixture completely. While constantly whisking with one hand, slow drizzle olive into the eggs with the other. Add oil until think like mayo.

This a basic emulsification and base for making other dressings. Its key to drizzle oil in slowly at the beginning. As the emulsion forms you can add oil at a quicker rate. Note: This a basic emulsification and base for making other dressings, adding fresh herbs like chives or tarragon can enhance the flavors depending on the use. My personal favorite is: add chopped mixed olives with egg yolks, garlic, and use orange juice and emulsify with oil.
