1 box of penne pasta
1 head of cauliflower
1+ cups pesto
1 pound ground sausage (can be spicy)
1 cup shaved Romano
2+ cups arugula
1 container grape tomatoes, halved

Directions:
Directions:
Cook pasta according to directions. Cut cauliflower florettes from stalk and boil/steam, then set aside. Brown sausage while pasta cooks. Drain pasta. Add enough pesto for pasta to be well coated. Mix in browned sausage. Add cauliflower, Romano cheese, and tomatoes. Add arugula right before serving. Top with additional Romano cheese, as desired.
