1 stick unsalted butter, room temperature
1/2 cup granulated sugar
2 eggs
3/4 cup self-rising flour
1/3 cup lemon zest
1/2 cup milk
1 small bowl cherry filling
1/4 cup marzipan, finely grated
1/2 tbsp. salt
Fro decoration:
1 small bowl whipped cream
1 2/3 cup confectioner's sugar, sifted
6 maraschino cherries

Preheat oven to 350ºF and prepare a cupcake pan with 6 cupcake liners. Beat the eggs, one at a time, and then add the butter and sugar. Mix all together in a bowl. Add milk and salt, then sift the flour and a little bit of baking powder into the mixture and fold it in. Mix all with an electric mixer. Spoon small dollops of the mixture into the paper liners. Add some of the cherry filling and sprinkle some marzipan over. Top with the remaining mixture. Bake in the preheated oven for about 18 minutes, until the cakes have risen and are golden color and a skewer inserted in the center comes out clean. Transfer to a wire rack for cooling. For decoration, beat the cream and sugar and use to ice cupcakes. Add cherry filling and cherries to garnish.
