whites from 3 medium eggs
1 1/2 cup caster sugar
1 tsp. cornstarch
1 tsp. white vinegar
1/2 qt whipped cream

Toppings:
1 orange segmented
2 kiwis, sliced
6-8 large strawberries

Directions:
Preheat oven to 170ºF. Beat the egg whites in a large bowl until soft peaks form. Gradually add sugar and continue to beat well. Add the remaining sugar, the cornstarch, and the white vinegar, and continue to beat until meringue mixture is very stiff and shiny. Grease the flat baking sheet with butter and cover with parchment paper. Gently spread the meringue mixture in a circle on the parchment paper. Make sure that the edge of the pavlova is slightly higher than the center so you have a very slight hollow in the middle. Bake the pavlova for 40 min or until the outside is dry and a very pale cream color. Remove from the oven and let cool completely. Gently remove from the parchment paper and place on a serving plate. Spread the whipped cream over the pavlova, decorate with plenty of fruit, and serve.
