Ingredients: Muffins: 1 egg 2/3 cup apple juice or milk 1/2 cup oil 1 tsp. vanilla 2 cups all-purpose flour 1/4 cup DOMINO granulated sugar 1/4 cup firmly packed DOMINO light brown sugar 1 tbsp. baking powder 1/2 tsp. salt 1 1/2 cups cored and chopped apple 1/2 cup chopped nuts Topping: 2 tbsp. DOMINO granulated sugar 1 tsp. cinnamon

Directions:1. Heat oven to 400ºF. Grease bottoms of 12 medium muffin cups or line with paper baking cups. 2. Beat egg with juice, oil and vanilla in medium bowl. Stir in flour, sugars, baking powder and salt just until flour is moistened (batter will be lumpy). Stir in apple and nuts. Fill muffin cups. 3. Combine topping ingredients in small bowl; sprinkle over batter in muffin cups. 4. Bake at 400ºF for 20-22 minutes or until golden brown. Immediately remove from pan to cooling rack. |

Notes: Don't stir muffin batter too vigorously or you'll end up with tough muffins. Just stir until all the dry ingredients are moistened; any lumps will disappear during baking.
