Ingredients: 3 T Butter Melted 4 T Flour 1-Cup Hot Milk ½ Cup Sugar 1 Orange –for grated zest Melt Butter in saucepan (do not scorch). Stir in Flour barely cooking to Roux. Add hot milk and sugar, cook for 15 minutes, stirring constantly to avoid lumps and scorching. Cook like pudding. Set aside
10 Eggs Yolks (Only five yolks used in first batch of batter) 5 Egg Whites 2 Oz. Grand Marnier
Add 5 egg yolks one at a time to batter and blend until smooth. Add 2 oz. Grand Marnier blending until smooth Beat 5-egg whites adding ¼ tea ea. of cream of tartar and salt until stiff but not dry. Thoroughly but gently fold in egg whites and divide into soufflé cups. Bake at 375 for 20 minutes.

Directions:Preheat oven to 375 Butter and sugar 4 to 6 individual soufflé cups
Sauce for Topping Make a second batch of soufflé batter as above but omitting egg whites and orange zest Add 2 oz Grand Marnier until smooth, pour over hot soufflés
Quick Secret Sauce Alternative 1 pint Vanilla Ice Cream - Warm and softly melted w/2 oz Grand Marnier Can warm in microwave on defrost cycle |
