1 cup sugar
2/3 cup vegetable oil
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
1/2 tsp salt
1 cup shredded carrots
1 cup shredded pineapple

Directions:
Directions:
Preheat oven to 350 degrees. Put carrots and pineapple in blender. Blend well. Combine all other ingredients in a bowl. Mix together. Add carrots and pineapple. Mix until smooth. Line a muffin tin with paper muffin liners. Spoon in mixture. Bake for 15 to 20 minutes.
