1 1/2 c oil
2 c sugar
2 c flour
3 eggs
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt
3 c shredded carrots
1 small can crushed pineapple, drained
1 c golden raisins
1 c chopped nuts, optional

Directions:
Directions:
Preheat oven to 350º. Grease and flour 9 x 13 pan. In large bowl, combine first nine ingredients and beat well at medium speed with hand or bowl mixer. Stir in pineapple, raisins and nuts. Bake about 45 - 55 minutes and then test for doneness with toothpick. Cool to room temperature before frosting.

8 oz cream cheese, softened
2 T butter, softened
1 orange, juiced and zested
4 c confectioner's sugar (or more)

For frosting: beat cream cheese and butter together with orange zest. Add 2-3T orange juice and beat well. Add in confectioner's sugar, beating well. Thin with additional orange juice for desired consistency.
