12 frog legs, skinned, cleaned
salt and pepper
1 c. cornmeal
3 eggs beaten
oil

Directions:
Soak frog legs in salted ice water for 1 hour; drain. Season with salt and pepper. Roll in cornmeal; dip in eggs. Coat with cornmeal again. Deep fry in hot oil like fried chicken (About 10 minutes per side or until tender.)

Memory: As kids, Schultz would walk with us to the Perch Pond (located on the north end of their farm). We'd take a gunny sack and long cane poles with a length of fishing line and hooks baited with a small square of red bandanna. We would sneak up behind big bull frogs sunning on the edge of the pond and slowly lower the hook in front of them until they jumped for the bait. Mom would fry the frog legs for us for dinner.
