3/4 cup flour (DRY INGREDIENTS)
1 tsp. baking flour
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp nutmeg
( I usually use pumkin pie spice, with a little extra cinnamon,if I don't have ginger or nutmeg)
FILLING FOR OF ROLL:
Mix thoroughly;
8 oz. cream cheese
4 T butter
1/2 tsp vanilla
1 cup powdered sugar
Directions:
Directions:
Beat 3 eggs 5 minutes at high speed. Slowly add 1 cup sugar
Then add 2/3 cup pumpkin(canned)and 1 tsp. lemmon juice
Blend dry ingriendents and fold mixture together.
Preheat oven 375º
Grease and flour jelly roll pan 15 in.x10 in.
Spread cake mixture evenly & sprinkle with 1 cup chopped pecans.
Bake @375º for 15 minutes
Turn out on towel covered(Well) with powdered sugar
Roll up in towel and allow to cool completely
Unroll and spread filling - cream cheese mixture-Re-roll-omitting towel
and chill(These are great to freeze ahead of time for the holidays and they make great gifts )
