1/2 stick butter
2 T. finely chopped onion
8 carrots, thinly sliced
1 tsp. salt
4 T. sugar
1/2 c. water
1 T. finely chopped parsley

Yield: 4 servings
Saute' onion in butter in a sauce pan. Add carrots, salt, sugar, and water. Cover and cook on medium heat for about 10 minutes. Garnish with chopped parsley and serve.

Variation: Glazed Carrot Coins: Cook 12 medium carrots (peeled and sliced into 1 inch chunks) in a small amount of water until crisp tender; drain and set aside. In the same pan, heat 3 T. butter and 1/2 c. packed brown sugar until bubbly. Stir in 1 T. grated lemon peel with the carrots. Cook and stir 10 to 15 minutes over low heat until carrots are glazed. Stir in 1/4 tsp. vanilla. Serves 6.
