1 lb. dried black beans
1 lb. dried great northern beans
1 lb. dried navy beans
1 lb. dried pinto beans
1 lb. dried red beans
1 lb. dried black-eyed peas
1 lb. dried green split peas
1 lb. dried yellow split peas
1 lb. dried lentils
1 lb. dried baby limas
1 lb. dried large limas
1 lb. pearl barley

Directions:
Combine all beans in a very large bowl. Divide into 13 (2 c.) packages. French Market Soup: Place 1 pkg. mixed beans in a large kettle. Cover with water 2 inches above beans; let soak 8 hours. Drain. Return beans to kettle; add 2 qt. water and 1 large ham hock or 1 c. ham pieces. Bring to a boil; cover, reduce heat. Simmer 1 1/2 hours. Add 1 can (16 oz.) tomato sauce, 1 1/2 c. chopped onion, 3 T. lemon juice, 1 chopped chili pepper and 1 tsp. minced garlic. Bring to a boil, reduce heat; simmer uncovered, 30 minutes. Remove ham hock; remove meat from the bone and return to soup. Season with salt and pepper.
