1 (3 oz.) pkg. cream cheese
8 T. butter
1 c. all-purpose flour
1 egg
3/4 c. packed brown sugar
1 T. butter, softened
1 tsp. vanilla extract
dash of salt
2/3 c. pecans, chopped

Oven: 325º ~ Yield 2 dozen mini pastries
Let the cream cheese and butter soften at room temperature. Blend. Stir in the flour. Chill the dough about 1 hour. Shape into 2 dozen (1-inch) balls. Place in ungreased muffin tins. Press the dough on the bottoms and sides of tins. Beat together the egg, brown sugar, butter, vanilla and salt until smooth. Divide half the pecans among the pastry-lined cups; add the egg mixture and top with the remaining pecans. Bake for 25 minutes or until the filling sets. Cool before removing from the pan.
