6 T. olive oil
1/2 C. finely chopped onion
3/4 C. lager beer
3 T. malt vinegar
1/2 tsp. sugar
1 T. Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Heat 2 T. oil in a small skillet. Add the onions and cook until just soft. Add the beer, vinegar, sugar and boil 5 minutes.
Put in a blender with the mustard. While the motor is running drizzle in the remaining 4 T. olive oil, salt and pepper.
Makes a great potato salad.
Also really good as a cole slaw dressing.
